Everyone knows that the combination of chicken with mushrooms cannot be losing - it is always delicious! But in this soup, one simple ingredient makes it even more tender: thanks to the processed cheese, both the taste and color of the usual chicken soup with mushrooms change, they acquire delicate creamy notes.

I want to offer you a recipe for a delicious soup that my family loves: mushroom soup with chicken and cream cheese. This soup turns out to be very tender and unusually fragrant and will appeal to both adults and children.

Of course, you should choose high-quality processed cheese, abandoning cheese products.

Well then, let's cook!

Ingredients:

Chicken fillet - 300 g;

Champignons - 100-150 g;

Potatoes - 2-3 pcs.;

Carrots - 1 pc.;

Onions - 1 pc.;

Salt, pepper - to taste;

Processed cheese - 1-2 pieces;

Vegetable oil - 2 tbsp. l .;

Fresh greens.

Recipe:

First of all, we’ll rinse and send the chicken to the broth to cook. Bring to a boil, remove the foam and simmer under the lid. You can throw a bay leaf for flavor. Since we have boneless meat, it will be cooked quite quickly, and if we immediately cut the fillet into portioned slices, then as long as we deal with vegetables, the broth will be ready.

We clean and wash all the vegetables. Cut the onions and carrots into small cubes, and cut the potatoes into medium-sized pieces. Rinse the champignons under running water, cut the edges of the legs and cut into thin plates.

Heat oil in a pan and lightly fry onion, carrots and mushrooms in it. We will not seek the golden color of vegetables, we just need to let them in and warm the champignons well. Such light roasting will make the soup more flavorful.

In chicken broth we put slices of potatoes. Leave it to cook, depending on the variety, from 15 to 25 minutes.

Add stewed vegetables with mushrooms to the soup. Boil for about 7 minutes. Salt and season the soup with spices to taste.

Three cream cheese on a fine grater and toss into the pan. Stir until the cheese has dissolved. Now the soup has acquired a delicate creamy aroma and has become even more tender in taste. If you want the soup color to be more rich and milky, take 2 curds.

Before turning off the fire, we will throw chopped greens into the soup and let it boil for literally a minute. Fragrant and very tender chicken soup with cream cheese is ready.
